Mushroom and Corn Pancakes

Gradually whisk milk into flour in a medium bowl.  Whisk in eggs, egg yolks, sugar and then melted butter.  Cover and refrigerate 30 minutes.

Heat a 10-inch nonstick skillet over medium heat.  Add 4 T. butter, mushrooms, garlic and sauté 5 minutes, stir in corn and remove from heat.

Heat 8” nonstick skillet over medium heat.  Spray with nonstick spray and slowly add a scant ¼ cup of batter and sprinkle with 3 T. mushroom mixture.  Cook 1 ½ minutes.  Flip.  Add cheese and fold over.  Serve immediately or cover in airtight container and broil when ready to serve.

1 cup milk
¾ cup flour
2 eggs
2 egg yolks
2 T. sugar
2 T. butter, melted
4 T. cold butter
3 cups mushrooms
1 t. finely chopped garlic
1 ½ cup corn
1 cup feta cheese

Amazing Fruit Salad
1 (3.9 ounce) pkg. instant vanilla pudding
2 T. Tang
20 ounces canned pineapple
2 kiwi, chunked
2 banana, chunked
4 cups fresh strawberries, chunked
1 Apple, chunked
Drain pineapple juice and mix it with the dry pudding and Tang.  Pour over fruit and stir.

Fruit Smoothie
1 cup squash, or zucchini - shredded
1 cup frozen strawberries
2 t. dry strawberry koolaid unsweetened
3 T. honey
1 cup water
1 cup ice

Blend until smooth. 

Tips:  Frosting - if you add a little kosher salt to your frosting it is more appealing to your tastebuds.  For a batch that would frost a normal size cake I would add about 1/2 teaspoon.

Dump out ALL OF YOUR BLEACHED WHITE FLOUR.  Bleached flour has Alloxan in it and it messes with your pancreas.  Read more at my blog.

Granulated Table Salt - I feel the best use for this product is to kill grass between the cracks in my side walk.

Roasted Vegetables:  Kids love roasted vegetables.  Non-Root Vegetables take about 15 minutes in a 400 degree oven.  Root vegetables take about 40 minutes in a 400 degree oven.  Cut vegetables as uniform as possible (cubed).  Mix 3 tablespoon dry ranch dressing and 1/4 cup extra virgin olive oil to every 2 pounds of vegetables.  I mix up a batch and keep it in the refrigerator. 


Hot Chicken Sandwiches,

1 large can of cooked, cut chicken
Pour into saucepan and heat.  Add crushed saltine crackers until thickened.  Let warm and serve on buns.  Fabulous.
